Try this quick, easy and tasty Chia Pudding for breakfast or midday snack. Chia is a superfood that packs in fiber, omega fatty acids, calcium, antioxidants and protein! I love it as a pre-run breakfast.
The night before…
A pint mason jar with lid
Optional: vanilla powder and a touch of maple syrup
Fill the jar halfway with oats. Add about a tablespoon of chia seeds and a pinch cinnamon to taste. Fill to about 2/3 full with almond milk, covering the oat/chias by about an inch. Put on lid. Shake. Put in the fridge.
Top with a chopped banana (or fresh berries), hemp seeds, coconut flakes and cacao nibs.
