I love sweet potatoes! Here is a recipe I make all of the time. You can make it with your oven or grill.
Sweet potatoes are highly nutritious and a great alternative to potatoes. They are high in beta-carotene, Vitamin C & E. It is thought that these three nutrients are a “beauty” food and contribute to a glowing complexion and shiny, healthy hair.
I just love them for their sweet taste!
4 large sweet potatoes, peeled and chopped into large pieces
Extra Virgin Olive Oil
2 limes, juiced
1 garlic clove – minced
Celtic sea salt – to taste
Cilantro, chopped – to taste – I like 1/2 cup
Get your grill, smoker or oven to 425 degrees – indirect heat.
On a large baking sheet, mix the sweet potatoes with about 1 tsp coconut oil. Use your hands to mix in the coconut oil. Roast the sweet potatoes until tender – about 30-40 minutes.
In a large bowl, combine about 1 tablespoon olive oil, garlic, lime juice and cilantro. Add cooked sweet potatoes to bowl, season with Tree Hugger rub.
Can be served hot or lukewarm as a side dish.
